Chapter 3

Miranda dressed in her black slacks and button up white shirt in a couple of days for her first day on the job. She braided her hair down her back and applied a coat of mascara and some lip gloss on her full lips, since cooking wasn’t a job that required cosmetics in any way. She grabbed the hat and tucked it under her arm as she called out a goodbye to Tilly. Pam had told her that the cover up would be washed and ready for her in the office upon arrival, so she walked out to the curb to hail a cab.

This was going to get old as well as expensive. She decided to look over subway schedules the next day as she slipped inside of the yellow sedan. Neither of the girls had a car here since public transportation was so abundant and Miranda considered changing that on the drive over.

She was working the lunch shift on a weekend to ease in, though that sounded kind of crazy to Miranda. It didn’t seem to ever be slow at Maple & Ash with its rabid popularity which made her glad that Marcus had asked her to come in a bit earlier than normal. After she tapped on the door, Lee let her in with a polite reminder to the customers outside that they’d be opening in an hour before greeting her. “You got right in. Pam can be a tough cookie sometimes.”

“How so?” Miranda pushed as Lee frowned and took her back towards the office.

“She runs a tight ship around here. It’s refreshing, to be honest.” Lee told Miranda in a soft voice as she laughed and tapped on the door. “Miranda is here!”

“Come on in.” Pam told her with a glance at the door as she pushed it open. “You look as I wanted you too. Here is a hair net to protect things further and your official Maple and Ash jacket. Welcome to the team.” She handed Miranda a white jacket and she looked it over with a nervous smile. “The staff preps the food for the two of you and helps out in countless ways. They’re amazing. Just follow Marc’s lead and you’ll be fine.”

Miranda slipped the double crested jacket over her shirt and slipped the hair net and hat onto her head before she walked into the kitchen. Marcus introduced her formally to the staff, at which point Miranda knew that she’d never remember all of the names. There were so many people between the kitchen and the wait staff not to mention the small group that ran the cash aspect of the business. At least she could say that they were all really nice.

Marcus started by showing her the popular lunch dishes and the system they had of reminder cards for the ingredients and process when it got crazy busy. She looked at a menu and picked up that many things were very similar and just needed a couple different items to differentiate them.
